Yeah I scienced the shit out of the new part. When I went to check the cheese/liquid ratio, the web page was closed and I had to get on with it so I just winged it. I probably should have thrown away the cooked pasta that I wasn't planning on having, but it was fine.

I lost track of what the real thing is. Bechamel? I'm tired of floury dry but oily ... it just never comes out right. So after reading the SCIENCE here I decided to try the sodium citrate stuff. Lots of the internet refers back to the Modernist link, and the internet had the same problem as I did: Where to buy sodium citrate on a Saturday afternoon? Nowhere. Your comment that some lemon juice will do the trick too notwithstanding, the internet also says citric acid isn't going to do what you want. So rather than pick a fight, I read on. I searched "sodium citrate substitute" and found several pages of forums just like this one, linking to the Modernist recipe, and saying that adding baking soda to citric acid will result in a sodium citrate solution. After reading a few different discussions, some of them extremely geeky, I learned that commercial sodium citrate is trisodium citrate, but what will result from baking soda/citric acid is monosodium citrate and I really know nothing about any of this but it was agreed that it might not be as effective. I dunno. The Modernist recipe calls for 11g of sodium citrate. The sciency pages told me that 8g of citric acid and 9.5g of baking soda would yield up 11 g of sodium citrate, and so I doubled that. Stirred it into hot water, added a knob of butter, then arbitrarily added milk until it looked like it was about enough. I made too much pasta (1.5# bag instead of 1#) so I dumped in all the cheap cheese I had (wasn't going to risk the better stuff on this experiment) and even tho the liquid was still really hot (I sort of forgot what I was doing), it smoothed out really well. It was a bit thin, so I stopped the pasta boiling just as it was almost al dente and prepped it to go into the oven. The sauce did thicken up a bit in the 15 minutes of baking. If I'd had a bit more cheese, I think it would have been amazing. As it was, it was better than I've ever made from scratch; needed to have a lot of salt & pepper tho. Next time I'll use all milk. Most of the recipes say just using water is fine but I thought the sauce seemed a bit translucent. I think it would look better and maybe have better texture with milk.

Anyway, thanks for the science tip!

Modernist Mac and Cheese

Kind of fun but not as good as the real thing IMO. You can go wild with the kind of cheese you use.

Interesting. Sodium citrate is found in American cheese, which, when used along say, cheddar, keeps the sauce from breaking without having to make a bechamel.

So, if I'm ever hit by a car while walking here in town, I know who the prime suspect should be: the woman who hates me, and who almost ran me down just now while Weezie and I were walking. I know her name and where she lives. {#Eek}

Being the only person at work who is involved in a huge project, and being the only one NOT offered over-time in order to work said project, does not help my feeling of being scrutinized and intentionally isolated.
